This is a great recipe for using leftover turkey.  It makes a delicious treat for lunch – just serve it on a bed of greens with a piece of crusty bread.

1 1/2 cups cooked turkey meat, coarsely chopped
1/4 cup celery, chopped
1/3 cup fresh seedless grapes, chopped 
1 fresh crisp apple, unpeeled, cored and chopped
1/3 cup toasted pecans or almonds or walnuts, chopped
2 T (more, if needed) mayonnaise or yogurt or creme fraiche
Sea salt and pepper, to taste
Fresh pomegranate seeds for garnish (optional)

You will also need:
Large bowl for mixing
2 spoons

Mix together the chopped turkey meat, celery, grapes, apple and pecans.  Add mayonnaise or yogurt or creme fraiche until the mixture is moist and holds together well.  Add sea salt and pepper to taste.   Refrigerate until ready to use. 

To serve, scoop out the mixture and place it onto a bed of greens.  Garnish it with a nice sprinkling of pomegranate seeds.  (For instructions on how to easily remove pomegranate seeds from their pods, click here. )
